It seems that the color of the last category in the alphabet is used for displaying. It would be nice to be able to set a priority of categories and the color of the highest category is used for displaying. Better would be to support a hierarchy of categories. I hope we can unite efforts and votes of all the duplicates here, somehow. I'm among those who voted for a duplicate after all. Summing up over all duplicates, this wish has about 150 votes! For all (including non-developers) out there who are interested in this feature: It isn't clear at all how this should look like in the final product. This fact might scare off developers who want to implement it. It would be awesome if someone would come up with some mockup of this.
