I confirm this also, however I think it is usability bug, not a wish. Choosing _another_ column is what it is -- choosing another column. Not changing the order of sorting for chosen one.
Btw. I did a small test and it appears that KMail sorts mails by single column. I don't know if I should another report so I write it here. There should be multi column sorting -- so choosing _another_ column doesn't change the sorting mode for chosen column, but makes it more important in sorting. Let's say I have Subject + Sender + ^Date^ and than I click on sender Subject + ^Sender^ + Date so Kmail should sort first by Sender, then by Date, and then by Subject. But all modes in _this_ case should be preserved. If I click again on sender the columns sort order should not change but Sender mode -- yes!

i believe new message list in kmail from kde 4.2 resolves the bug
Tested on KDE 4.3.3 and this seems to be fixed.
