It would be nice if knotes had something for that : right -click on a note then label then a category of label. I recommend the following themes and colors, mostly inspired by mozilla-mail : work (orange) personal (green) important (red) later (blue) none (yellow)
I have started to write a patch for that .. I also found a bug : knotes does not update the statusbar popup menu when the color of a note is changed (with the preferences).

on the same note, it would be great if knotes accepted draganddrops from color pickers just like nautilus does, that way I can use kcolorchooser or the kcolorchooser kicker applet to colorize my notes quickly. Thus I can pick any color in the screen with the kicker applet then drag the color ball to the knotes note and have it match visually the color that I selected. Very useful.
