Please, communicate this problem to Ubuntu. 
Easy solution. Tested, for years, in five or more computers, do always the same:
Krita Snap installation in Ubuntu, appears without Krita Icon.

ORIGIN PROBLEM IN FILE: /var/lib/desktop/applications/krita_krita.desktop
In section "Icon=Krita"

SOLUTION: When installing, please put the correct name and path of image file, for example:
Icon=/snap/krita/109/usr/share/icons/hicolor/512x512/apps/krita.png

Is possible that my solution should  not be the best.

I agree!
Ubuntu / Snap developers should fix this problem as they are the ones insisting with Snaps everywhere!
