The scan resolution settings gets reset to 75 dpi every time I restart Skanpage. I would like this to be saved, or at least to have an option for that, so i don't have to change this back every time

It should already do that, this a bug.
Could you please provide the model of your scanner and do you know by chance which SANE backend you use?

it's a WSD Canon TR8500 series connected over network. how do i check the SANE backend?
