SUMMARY
I changed the regional setting for the storage unit used in Plasma. The newly set storage unit is used everywhere else but on system monitor widgets. They keep using IEC (KiB).

STEPS TO REPRODUCE
1. Open system settings
2. Go to Language & Time > Region & Language
3. Change the storage unit setting from IEC to SI/JEDEC
4. Apply changes and restart

OBSERVED RESULT
The system monitor widgets keep using IEC (1.0KiB = 1,024B).

EXPECTED RESULT
The system monitor widgets should respect the regional setting and use SI/JEDEC as their storage unit.

SOFTWARE/OS VERSIONS
Linux/KDE Plasma: secureblue 41 (powered by Fedora Atomic) 
KDE Plasma Version: 6.3.2
KDE Frameworks Version: 6.11.0
Qt Version: 6.8.2

ADDITIONAL INFORMATION
I have tried re-adding the widgets and setting the storage unit back and forth.
