Dark mode is determined by pressing the "Moon" icon on the bottom right corner of the status bar, or else going to the View menu and selecting "Dark Mode". It can be deselected by simply unchecking the same button/checkbox in either of those two places. It is independent of the Global Plasma color scheme settings, as the application has its own color schemes that you can select.

Please, treat this is as an UX/UI issue, since Ghostwriter uses non-standard UX both for changing the theme and not respecting plasma global themes, thus mpacting overall UX for any new users.
It would be nice to have a feature to import plasma global themes, or even better to separate the window color scheme from the editor configuration theme, like Kate does.
