SUMMARY
When choosing a custom accent colour, one of the dropdown boxes is too narrow, so it can’t show any text. Only ... is displayed. See the attached video.


STEPS TO REPRODUCE
1. Choose to use a custom accent colour.
2. Click the custom accent colour button

OBSERVED RESULT
Dropdown box only shows that first letter of the text (H on my system). When clicking on it, only ... options are shown. See the attached video.

EXPECTED RESULT
The text should be visible.

That's the standard Qt color chooser dialog, which comes from Qt. It is indeed rather ugly and buggy. However I'm afraid you'll have to report it to them at https://bugreports.qt.io/

Based on your screen recording, I see other instances of inappropriately elided text too. That could be a clue; maybe a recurrence of https://bugreports.qt.io/browse/QTBUG-92006?
