SUMMARY
Cpu/case fan speed sensors are available for selection in the settings of System Monitor widgets on Plasma 5.27.9.
However, these sensors are not available on Plasma 6 beta.

STEPS TO REPRODUCE
1. add System Monitor Sensor widget to desktop
2. open the widget settings and click on "Sensors details" in the left side
3. search for fan speed sensors

OBSERVED RESULT
fan sensors are not available

EXPECTED RESULT
fan sensors are available

Same on this FC39 box...
With 5.27.10/Frameworks 5.112.0-1  I could choose hardware, Sensor Details > Click to select Sensor > Hardware and all my hardware sensors are listed IE lmsensors/it8655-isa-0290/ 

With the Beta, Sensor Details > Click to select Sensor > Hardware, the only option has some random "Temperature 1" and that's it.

Just giving my "Same here" as well.
I can see only 3 sensors instead of tons that I have (zenpower + nct6795 + nvme)  and, for the ones that I can see, they don't yield any value on plasmoid.

Same thing for me. The zenpower provided sensors are missing, although they are showing in the `sensors` command:

This seems to be fixed now (for me) with the commits mentioned in bug #452763
