STEPS TO REPRODUCE
1. Opened software and chose 300 DPI resolution
2. Successfully scanned a document and closed the software
3. At the next use, opened the software and all settings have stayed in place except for the resolution setting (back to 4,800 DPI)

Thanks for the report! 

I suspect that it has to do with the order in which the parameters are restored. If we first set the resolution and then the scan source, it might be that setting the scan source also sets a default resolution....

Can you test doing it manually? setting an other scan source, set resolution and then set the scan source a gain. Does this change the resolution too?

Yes, it always defaults to 4,800 DPI.

Reselected scanner device, set parameters and scanned a document.

Closed the software and logged out/in and same thing, scan resolution 
set at 4,800 at start.

Does it have an option that says "Scan Source" ?

If yes, can you change that to something else, change the resolution and then change the "Scan Source" back to "Flatbed" (or similar) and see if the resolution changes?
