In each metadata tab there is a filter button next to the search, where you have to select custom. Maik

sorry for the false alarm. so it's not really a bug, but a lack of interface ergonomics. It's not obvious that you have to make this choice at this point to display the fields you want. I thought the choice in the preferences was enough. and as I'm not really an English speaker... (thanks to DeepL)
