SUMMARY
Mouse pointer in 5.27.5 is much more slower than before on default settings. To get it around the same speed as before I tweak pointer speed slider in settings almost to maximum.
X11 session. I haven't tested on wayland.

STEPS TO REPRODUCE
1. Update to 5.27.5
2. Mouse pointer is slower than before with default settings

I'm just realize that the acceleration profile has changed to the "flat" instead "adaptive"? I switch it back to the adaptive and behavior restored as previous. But, why "flat" is so slow by default...?

This is an upstream libinput issue.
