The "removable devices" thing by default offers "mount and open" and I never ever want to mount and open, I always want simply to mount. It would be nice if this either learnt from past actions or was user settable.
The assumption behind the current behavior is that if you plug in an external device, you want to interact with it immediately, and the most common way to do that it through the file manager. Hence, "mount and open" being the default action. Can you describe your workflow that makes "mount" more useful than "mount and open"?

I immediately want to mount and do other stuff than open the file manager - hence I want the convenience of click mount get on with work without having to dismiss dolphin. This isn't windows you know! I typically mount, write to the disk from another program or use a shell. The file manager is very rarely what I want (<<1%). Click to mount is significantly more convenient than manually running mount and I never mount sticks automatically. Streamlining this by not hardwiring this behaviour is high desirable.
