SUMMARY
Just like pavucontrol the applet and the settings menu only show the device names and not the sink names.
This can be confusing, if you have multiple devices of the same type.

You can see multiple "null-sinks", and I gave them specific names, but the names are not shown.

1. It works, when I set "sink_properties=device.description=null-name1" then "null-name1" is shown instead of the device name. So thx for the workaround.
2. To the "why" part, why should I assume that setting the description will change the name? This is not intuitive.

Yeah, that's just how pulseaudio is. name is a unique identifier. description is the actual pretty string that gets displayed
