Editing the default color schemes is not possible, you need to "Save As" under a new name to create a custom theme. The custom theme then is editable.

Ok but this is not very user friendly.
Well, saving as another theme and then applying colors settings (color title bars and tinting windows) doesn't work.

I don't understand : in this video (https://www.youtube.com/watch?v=r2wvaoprP2M&t=442s), Niccolo is editing and saving default style (Breeze light).

This is intended behaviour: https://invent.kde.org/plasma/plasma-workspace/-/blob/5328a8773d72a1866a879d89d3f919d3e2153292/kcms/colors/colors.cpp#L306

If the color scheme is not removable, it cannot be overwritten with a save. Niccolo is running developer setup and has probably messed around with his theming and colours which makes it behave differently. If you have another issue with the settings not applying correctly, I'd recommend creating a new issue with a description.
