STEPS TO REPRODUCE
1. Installed new 3.5.8 over previous 3.5.8 because of bug report of not taking bias frames
2. Opened Kstars and Ekos and loaded created Telescope Sim profile with Telescope Sim, CCD Sim and CCDguide Sim
3. Started the profile with immediate crash

What you are describing here sounds a lot like an intermittent issue we discovered a couple of months ago.  https://indilib.org/forum/ekos/11081-mac-kstars-3-5-7-beta-new-build-please-test.html?start=48#79669

At the moment, we are not 100% sure what causes it, since it is intermittent, but a couple of clues seem to be related to INDI verbose logging and related to the kstars settings, which are in the kstarsrc file.  Can you try first turning off verbose logging, particularly of the CCD driver?  Another thing you could try is to back up/rename your kstarsrc file and have it generate a new one.  You can delete that one and put back your old one after trying this experiment.
