Well the only output device shown is a HD Audio Controller and the only port is "Speakers (unavailable)". Also, dunno if it's helpful, but I was unable to reproduce this in Arch with Plasma 5.23.5, only in KDE Neon testing...
Plasma hides devices that only have one unavailable port. Otherwise what Plasma and pavucontrol show is the same? That would suggest that Plasma works as expected with the information it gets from PipeWire. If profiles are marked as available but shouldn't be then it's an issue in Pipewire. Please report that to https://gitlab.freedesktop.org/pipewire/pipewire/-/issues
