This comes down to GNOME not shipping any theming for Kirigami-based applications. If you want to resolve this, I recommend you ask your distribution packagers to bundle in the relevant breeze theme packages to improve the appearance and to make it look as it does under KDE Plasma. You can also try to install these yourself -- an important package is qqc2-desktop-style .
