SUMMARY
It's not possible to use telepathy for jabber account, when domain of jabber-ID and server domain differs. For example when jabber-ID is user@domain.com, but xmpp server runs on xmpp.domain.com.

STEPS TO REPRODUCE
1. Have some jabber account with domain in ID different than xmpp server domain, as described in summary example.
2. Right click instant messaging icon, choose settings, create new account, choose jabber.
3. Fill in your jabber id and password
5. Click advanced and set server address.
6. Try to connect

OBSERVED RESULT
You can see via wireshark and/or in system journal, that telepahty tries to connect to domain.com instead of xmpp.domain.com. I.e. explicit server setting is not taken into account. There is no sign of communictation with xmpp.domain.com.

EXPECTED RESULT
Telepathy will connect to xmpp.domain.com.

Dear user, unfortunately Telepathy is no longer maintained.

Please migrate to another solution, e.g. for Jabber a possibility is Kaidan, for Matrix a candidate is NeoChat.
