SUMMARY My Pixel 2 XL shows up in Disks & Devices after accessing it from the Places view in Dolphin. It used to appear automatically after plugging in. This is a high-speed (USB 2) device. My Pixel 5 does not show up in Disks & Devices in any case. I am plugging it in via a Thunderbolt bridged connector just in case this makes a difference. This allows the device to use SuperSpeed without going through a USB-A connector. Browsing from Dolphin works fine. I think Pixel devices or any MTP device should be appearing under Removable Devices, but both show up in the 'Devices' section in the Places view. It's an issue that seems to be intermittent. If this happens again, what kind of information can I attach for debugging?

Honestly I think this is a USB-C cable issue. Sometimes the cable works, other times it doesn't. If I use a USB-C to 3.x cable, it always works.
