SUMMARY
When going to "Edit Metadata..." for a .HEIC or .mov (HEVC video file) everything is greyed out (Edit EXIF, Edit IPTC, Edit XMP).

I have the latest ExifTool installed and set up correctly in digiKam.

Other image and video files' metadata can be edited without a problem.

Exiftool is also not yet used for this task.

Fixed with the new support of ExifTool to write metadata in place of Exiv2.
