SUMMARY
If we set a panel to use windows color (be it active or exciting) icon colors will change with it, some icons look bad this way.

I think it'd be good to have icons not be affected by panel color changes

this can not be identified properly so for applets:

1. You can disable autocoloring for specific applets if you want: Right click dock, Edit Dock.., Rearrange and configure your widgets, hover any applet you want from its tooltip you can disable autocoloring for that applet
2. Window Title applet can support nice autocoloring with latte: https://store.kde.org/p/1274218/
3. For the systray you can use: https://github.com/psifidotos/plasma-systray-latte-tweaks that provides an extra option in systray settings to disable/enable autocoloring for specific systray items

Thank you, I didn't expect such an option to appear when toggling this option. I also wasn't aware of that systray applet, I'm going to test it out.
