When looking at the menus on the desktop and right clicking some of them, it seems that as you go deeper into some of them, the size of the menu's width gets smaller and smaller. I think that these menus should have a consistent width and a minimum size that "only" gets wider when the content is too long, but that it should not get thinner if the content is too short. One reason for this is that the menus then become easier to miss. Users have to use more precision to target submenus. This is one of those visual consistency requests. I don't think it is controversial.
I'm not quite sure which menus you are talking about. Could you add a screenshot?

The width does get smaller for each sub-menu. That's because the menu width is calculated to not be wider than needed, and those sub-menus don't have any additional elements that make them as wide as the parent menu. If we made these sub-menus wider to have them conform to some minimum width, where would that extra width go? Off to the right? I guarantee you we would get bug reports from people complaining about the pointless extra space. Not sold on it, sorry. :) Convince me!
