SUMMARY
Wish the Default Application settings will be the one-stop shop to setting defaults, such as setting by application, and by file extension.  As of right now, it's very sparse.  One way it could be improved is by setting default applications for videos, images, etc. in System Settings instead of looking for a file in the file manager and customizing it there.
