It would be nice to modify volume in smaller increments.

e.g if you switch to headphones a 5% change can be too much, but when using speakers it might be find dependant on model

something like shift+volup/down, would be ideal, but once the functionality is exposed the particular key bindings are not that important.

You can! :) Click on the configure button in the popup, which will open the settings window where you can configure the increment.
