SUMMARY
I use 2 monitors for my PC; my primary display and my Huion Kamvas Pro 13. I plug my monitor into the display port on my PC, and the tablet into the HDMI port. When I have both plugged in, the pressure sensitivity on my tablet wont work. This is exclusive to Krita, as I've tested in on Paint Tool Sai, and in the Huion Tablet Settings. I've tried unplugging my main monitor and running Krita, and found that pressure sensitivity does work when there's only one display.

STEPS TO REPRODUCE
1. Have 2 monitors plugged in.
2. Open Krita
3. Try to draw on the Huion tablet

OBSERVED RESULT
Pressure sensitivity does not work on Krita

EXPECTED RESULT
Pressure sensitivity should work

Tried it, it did not work.

Well, it's obviously something specific to your setup, since it is definitely not the case that "multiple monitors don't allow pressure sensitivity". Please refer to the manual for ways of debugging the situation:
