When I open a new document and try to edit it, the mouse-pointer disappears as soon as it hovers over the software on the screen.

Are you sure it disappears completely and not just turning into an extremely light green colour? If it's the latter, there is a chance it is fixed on the latest 3.2 beta 1. Can you test this version? https://krita.org/en/item/krita-3-2-beta-1-released/
