When I input some text via Googles Speech Recognition the input appearing in the text input fields have y's changed to z's. I'm using German settings on my Android Fairphone. In German layouts (like some others layouts) the y key is substituted with the z key.

Examples:
"yet another test" becomes "zet another test"
"Jimmy Fallon" becomes "Jimmz Fallon"

So the recognition on the Speech Recognition side is correct. Just the conversion or sending to the text input field is then changed.

Same problem with e.g. "Grüßen" (engl. "greetings"/"regards") which gets converted to "Gr[ßen"

Sounds like an issue in Google's side? Can you still reproduce?

Please reply using Google Speech Recognition ;)

Experienced the same issue with dvorak.  Happened to notice the following (which I use regularly to move the control key location) seemed to clear the issue:

setxkbmap -option; setxkbmap -option ctrl:swapcaps

Note this has no effect on the keyboard layout. It remains Dvorak.
