Hi,
I don't understand why anybody have the availability to add vpn/wifi network in the nm connection editor interface. (furthermore it seems to appear too when wifi service are unavailable ...) 

I would like being able to control which items should appear in the Add menu.

The user interface could be locked down for users (kiosk mode), letting only the possibility to modifiy the standard ethernet settings (in my case...)

I would say that this is too user specific that nobody is going to add such option at this moment. The only use case for this is probably kiosk mode as you mentioned but in that case in my opinion would be better to disable all network configuration, even access to plasma-nm applet where you can connect/disconnect network. Also, there are other ways how to add/modify vpn/wifi connections without using our editor so you would need to disable this everywhere to achieve what you want.

The computer is dedicated to drive a real industrial application. I can not disable completely network settings in order to allow customer to integrate the computer in it's lan. I will check for workarounds.

But in my mind, it is very easy to know if services like wifi are enabled or not and thus customise menus depending on these options. I will have a look at source code too...

Of course it's easy to get info whether some hardware is enabled or present, but what if someone would like to configure a wifi connection for a future usage or pre-configure mobile connection when he has time and don't want to be bothered with this once he plugs in required device? I know, this is really stupid and probably not a common case, but we shouldn't restrict our users on our assumption that they won't probably use it. If you are willing to create a patch/solution allowing to simply configure this then I'm more then happy to review it and include it in plasma-nm, but my free time is limited and I don't want to spend it on such specific feature.
