It would be nice if one of the "Display" options was "Attribute Types", such that an operation can appear in a diagram with the attributes listed but without the additional clutter of the ": type".

You already tried the "attribute signature" checkbox in a diagram property dialog display options page or the umbrello settings class page ? This checkbox is exactly for that purpose.
