Trying to connect will fail without any useful error (even in syslog all you see is that the connection is dropped). The encryption settings are hidden in PPTP Settings->Advanced->Use MPPE Encryption. I've never seen an unencrypted PPTP VPN, so I think it should be enabled per default (set to Any). Also, PAP should be disabled per default as it is horribly insecure. We use the same defaults nm-applet uses. I prefer to keep the same defaults they use since nm-applet and NetworkManager share the same developers and they must have a reason for using those defaults. You can contact NetworkManager developers and ask why they use those defaults, if they change the defaults we can change too.
