Version:           0.10 (using 4.4.00 (KDE 4.4.0), Gentoo)
Compiler:          x86_64-pc-linux-gnu-gcc
OS:                Linux (x86_64) release 2.6.32.9

okular can be used for pdf presentations (aka fullscreen mode) but it should use command keys like e.g. Openoffice Impress (which is compatible to MS Powerpoint) to make it more useful with presenter devices.

In this moment Page up/down changes the page, the dot key removes the mouse cursor, F9 does nothing, F5 reloads the document and escape returns from fullscreen mode.

This is a little bit inconsistent to Impress, where the mouse cursor immediately vanishes as the fullscreen mode starts, the dot key creates a black screen and the F9 key starts fullscreen mode (like F5 does there, but document reload is ok for F5 in okular as F9 is free).

I own a Logitech Presenter R400 which sends the following keys:
Logitech button    X11 key 
Left    Page Up 
Right    Page Down 
Blank screen    . (ascii dot) 
Start/Stop Presentation    F5 or Esc (this is not quite clear how and if, I read this information on http://www.shallowsky.com/linux/remote-presenter.html but xev doesn't show any input at all from this device, I have to find another way to dump the input from this device)

I'm sorry but we are not going to modify Okular shortcuts to fit your specific use case, that is why okular shortcuts are configurable so you can adapt them to your needs.

On the other hand if any of the shortcuts you need to configure does not appear in the Settings->Configure Shortcuts dialog, that would be a bug and i'd be happy if you open a bug specifying the shortcuts you want to configure and you can not because they are not available.
