For example, the pattern "%artist - %title" will parse "Trans-Siberian Orchestra - Carol of the Bells" as: Title: Carol of the Bells Artist: Siberian Orchestra
Please upgrade to Amarok 2.2.1 available in the Kubuntu backports PPA, this should be fixed already IIRC.
This was not fixed by my upgrade to 2.2.1.
It should be fixed if you do a full collection rescan, then restart Amarok. Please try again.

By "Full collection rescan" I assume you mean "Tools | Update Collection". I did that and restarted the program, but the Guess Tags From Filename feature is still displaying the same incorrect behaviour as before.

No, absolutely not :) Go to the Settings menu -> Configure Amarok -> Collection -> Full Rescan Collection. The restart Amarok Update Collection does only check if there are new entries.
This was not fixed by a rescan. However, one of my other problems was.

This Problems should be fixed in the current Git version as the Tag Guessing algorithm was fully rewritten and is now internally based on regular expressions. Please either test the Git version, the current beta version or wait for the soon upcoming Version 2.2.2.
