I'm missing the ability to remove tags from a file.

But also the ability to change a tag (add an icon, change the description, name, ...)

Sounds pretty much like the same feature set requested in bug #165188

Removing tags works nowadays. Everything else should be filed as wish against the BalooWidgets component.
