The method in Evolution is to choose HTML for the format of the signature.  Font features: Italics, Bold, Underline are available, as are the various font sizes +2 +1 0 -1 -2 .  I can insert an image from file in the sig.  In my case it is an animated gif - looks fantastic.  I am looking to move myself and my clients to Kontact, because Sync with Windows mobile devices looks reasonable.

I am in an "image" business - advertising banners and flags, and digitally printed displays.  It is important to look good.  There is no place for a Plain Text email in this environment.
