Plasma 5 allowed me to modify the default Kickoff menu like this for example:

It seems like this feature has disappeared under Plasma 6. All features seem to be hard-coded into the Kickoff menu. This is a bit puzzling. Normally this is the kind of thing GNOME developers do. 

Please restore the possibility for a system administrator to tweak the default configuration for all users.

On a side note: we're currently running Plasma 5 on Rocky Linux in our local school. I'm preparing the upgrade to Plasma 6.

The method changed, but it's still possible. See Bug 448660 comment 12.
