My email system produces some custom headers that I would like to see above my received emails. Currently I switch to 'All Headers' when I *need* to see them, but I have to switch back to some other settings because 'All Headers' includes alot of things that I dont want to see.

It would be nice to be able to customise exactly which headers are displayed.

Indeed! At work we have a web based archive system that provides a URI 
for every archived email (based on the MID), I'd like to have this viewable if 
present. Eudora used to have something like this feature with its  "Taboo 
headers" that I liked very much.
