Dolphin is lacking touch and multitouch support.

This is fatal for users on hybrids, tablets and smartphones.

Other apps such as Okular and Chrome work effectively.

Dolphin needs: 
pinch to zoom
two-finger scrolling
one finger select (works but poorly)
two fingers open
long-press context menu (works but poorly)
swipe to multi select
doubletap name to edit

Also the choice of using single or double tap to open/select should be in the Dolphin configuration menu, it appears to make no sense in the Input KCM, totally unintuitive for users.

I agree. However, this bug is so broad that it is not actionable. We need one issue per bug report. I encourage you to open individual bugs to track these issues. There are already bugs tracking some of these, e.g:

- KDE Dolphin double-click setting is in the wrong place
