It would be nice to be able to hide certain fields in the ToDo view. For example I never use the Priority field but I cannot make the field invisible.

Hi!
You can move the fields. For your example you could move "Priority" to the 
extreme right. In the next release this order will be restored after 
KOrganizer restart.

The possibility to move/hide columns on TODO has been implemented on KDE4.
