Don't think that it's dolphin bug but...
When i trying to open remote (ftp) file by: right click -> open with... -> choose a program and then open file via this dialog (in my case text file in kate) it opens a local copy in /tmp dir. All work done with this file doesn't affect remote file.

May be this bug is also work for smb, I didn't test.
