Resolved?? This still happens in Kubuntu KDE 4.0.0 packages...
Well, if I click one of the buttons on the left side in Okuar, the sidebar disappears (no, not the buttons, but the sidebar does). If you also want to hide the buttons, you should hit F-7 and they disappear as well.
This is not working for me. Each time I start okular, the sidebar is there, even though I have deselected it on the menu the last time I used the program. Looking at the menu after startup, there is no mark next to the its menu item, but still the sidebar is there is there. I can remove it by clicking on the menu item to turn it on, and then once more to turn it off. Equivalently, I can press F7 twice to remove it. It comes back the next time okular starts.
