SUMMARY

On current official arch package, only ext and affiliates filesystems are available for creation.

STEPS TO REPRODUCE
1. open the app
2. create new table 
3. create new partition

OBSERVED RESULT

only a limited choice in filesystems

EXPECTED RESULT

access to fatxx filesystems, NTFS...

SOFTWARE/OS VERSIONS
Windows: 
macOS: 
(available in the Info Center app, or by running `kinfo` in a terminal window)
Linux/KDE Plasma: 6.18.2

Report it to arch then, that's not an upstream issue. Most likely you are just missing various file system tools that partition manager uses.
