There is currently an keyboard shortcut entry for peeking at the desktop but not for minimizing all windows. Minimizing all windows is currently activable from a clickable widget form the same name but it need a dedicated keboard shortcut entry.

You can set one yourself in System Settings > Keyboard > Shortcuts > Window Management.

What is his name ? I only found the entry to minimize the current window and peek at desktop but not for minimizing all windows at once like what is doing the dedicated widget.

It's called "MinimizeAll", at least in English.

The shortcut don't seem to exist for me (see attachment)

In System Settings > Window Management > KWin Scripts, is there an entry named "MinimizeAll"? If there is, is it unchecked?

Okay found it. However it's a UX issue that this shortcut is hiden behind a Kwin script that is disabled by default

Could be. Feel free to open a new bug report requesting that it be enabled by default. Or even submit a merge request to do so. It wouldn't be hard to do.

You would add a new line containing:
