It would be greatly appreciated if the one-click OCR function now present in Microsoft Photos would be available on Linux too, sepcifically in Gwenview.

This is currently being worked on in the Screenshot app (Spectacle). Depending on the implementation there, one could try to port it to Gwenview later.
