This is the menu.

I like to replace text by selecting it, then pasting the text over it. I don't like that when text are invisibly copied when they're selected.

All settings from the menu in this attached screenshot doesn't deactivate copying by selecting, it just makes it work differently.

So I'm requesting the option to NEVER copy by just selecting text in any way.

It exists in System Settings > General Behavior > Middle-click: > uncheck "Pastes selected text".

Why this isn't on the Mouse and Touchpad menus?

The same reason all the other clicking-related settings on that page aren't there: because they apply to both mice and touchpads, so they would have to be duplicated across both despite being global in scope, which isn't ideal.

In the future when we have a combined "Mouse & Touchpad" page, we'll be able to move all the global-scope options there. It's on the long-term roadmap.
