Research:
Seems like `fcitx5` have something to do with this Case. See [here](https://www.reddit.com/r/kde/comments/1icdcuz/comment/m9pq9jc/?utm_source=share&utm_medium=web3x&utm_name=web3xcss&utm_term=1&utm_content=share_button).

make dependencies may be also possible, may 'cause of the new `fcitx5`. See [here](https://www.reddit.com/r/kde/comments/1icdcuz/comment/m9wfvbf/?utm_source=share&utm_medium=web3x&utm_name=web3xcss&utm_term=1&utm_content=share_button).

> What's wierd is, can it be that the "virtual Keyboard" and the Physical one are linked? But why should it change the Language Package?

> Tryed `sudo pacman -Rn $(pacman -Qdtq)` which is removing orphans

The official Repo of fcix5:

> Note: By itself, fcitx5 has only a basic framework that just gives English support. If you want to input other languages, such as Chinese or Japanese, you need an Input Method Engine (IME). See Input method#List of available input method editors for a list of available IMEs.

I try `sudo pacman -R fcitx5` now, too delete the Package and Reboot my Device

unofficial - [FIXED]:
Solution
> The package Fcitx5 must be uninstalled under #endeavouros. This package only has English support and overwrites the physical or selected setting.

Command:
`sudo pacman -R fcitx5`

It's a pain in the *** but now I don't have to set it to #german after every #reboot...
This is for me a temporary solution...I leave it to the dev's if they want to fix it further.

The Issue was send to `fcitx` (https://github.com/fcitx/fcitx5/issues/1270) too (more like they can documentate or resolve too).
