konsole --help show :
Usage: konsole [options] [args]
Terminal emulator

Options:
-h, --help Displays help on commandline options.
–help-all Displays help including Qt specific options.
-v, --version Displays version information.
–author Show author information.
–license Show license information.
–desktopfile The base file name of the desktop entry for this
application.
–profile Name of profile to use for new Konsole instance

In the plasmashell popup, setting an profile option in TerminalOptions= --profile "MY_USEFULL_PROFILE"
does not help.
It is the 'Default profile' which is used.

STEPS TO REPRODUCE
1. Edit a .Desktop file
2. Set an option : TerminalOptions=--profile "MY_USEFULL_PROFILE"
3. 

OBSERVED RESULT 
A terminal konsole is open using the  'Default profile'


EXPECTED RESULT
A terminal konsole should open using  'MY_USEFULL_PROFILE'

I understand what you are trying to achieve, but I don't know how you are exactly editing the .desktop file. Could you take a screenshot of the dialogue box so I know where to look?
As for your question regarding documentation for configuration options, I would ask on the forums (https://discuss.kde.org) and hopefully someone there knows where to look.
