The instance mathstodon.xyz is a math focused instance. It is rather essential for math for be able to typeset LaTeX. 
The web insterface for the instance supports this, see https://mathstodon.xyz/about. Would it be possible to add support for math rendering in Tokodon?

Sure, why not. This would be a pretty insane feature to add, and should be possible once I get some other required text processing refactoring in.
