OBSERVED RESULT
The windows categories does not show the categories but only income (in german Einnahmen) or expenses (in german Ausgaben)  for all categories

Can you explain or give an example of what is missing?  Every Category is either Income and Expense.  If you mean than when you open the Categories View you only see Income and Expenses listed, you need to click the > at the left to expand the list.  In addition, below the list of Categories, at the far right, there are two buttons to collapse and expand the list.

Have you tried making the first column in that display wider?  You should be able to grab the divider between the two column headers and move it to the right.
