Can you please try the latest build from here? https://binary-factory.kde.org/job/KStars_Release_macos/

The bug has disappeared from the last release : it's possible to select the polar alignment speed. 
I found also that bug https://bugs.kde.org/show_bug.cgi?id=460339 has been solved : the buttons of the Mount panel are now active
